Ryan, the master butcher there and who has many years of culinary and butcher experience, will be running the day here He has a kick ass smoker that he will be bringing and teaching you how to start a smoker, tend to it, and make bacon!
Each person will get an 8oz pack of oak smoked bacon from the Wise Ox as well as an (average) 2lb. piece of pork belly to cure in class and take home to smoke.
