Beyond excited for these! This is our absolute fav cut. These are beefy flankens. Thick cut and so tasty. unlike commercial cut flanken ribs these guys are not grassy tasting but huge and wonderfully marbled. We like to throw some aminos on and do a healthy take on korean style ribs.
If you have not had these before, think of beef ribs cut the opposite way! They are about an inch thick and maybe a foot long.
The Mindful Meats organic beef is raised on pasture in Marin and Sonoma counties. We up-cycle organic pasture raised dairy cows for our beef. Breeds include Holstein, Jersey, and often crossed between the two. The Mindful Meats cows are unlike anything on the market today. This beef has natural intra-muscular marbling due to the mature nature of the cow (3-10 years old) and deep rich flavors that you can not obtain in young production beef.These breeds of cows lend a sweet buttery quality to the meat.
